With most printers, you are required to have ink in both the black and color ink cartridges in order to print in black as color ink is needed in this process. They work in conjunction with each other. So you will need to have the both usable color and black ink cartridges with ink, the same thing applies for color. It also is used as a lubricant that also helps to prevent print head damage.

In the printer driver, there is an option for "gray scale" printing. That
should use only the black cartridge , but you also will need a usable color cartridge installed for that option as some color ink is also used.

This is the problem of inkjet printers. The ink clogs sitting around. If you don't replace cartridges immediately, your heads become clogged with the ink residue that sat around. You should leave the printer on. It takes very little power and circulates the ink every so often to avoid clogging.
To recover from a clog try this:
leave the printer on for a day
run several head cleanings and print the nozzle check pattern
if that doesnt fix it, remove the cartridges and drop alcohol where the ink enters the printer.
reinsert the cartridges
run one head cleaning
wait about an hour then run some head cleanings.
if that still doesnt work, your heads may be clogged to the point where they need repair or replacement, which will probably cost more than a new printer.

I know it seems like the printer companies are just ripping you off by doing this (and maybe that's a good side-effect for them), but there really is a good reason for this to happen:

1. Printer uses a bit of each color to make black - it does this to keep ink flowing through the tubes and keep the nozzles from clogging up. You end up using *more* ink if you constantly have to clean the nozzles.

2. Printer won't print when one color is empty - If you try to print with no ink in one of the cartridges, it can damage the printhead if you do it enough. This can happen on any inkjet printer from any company. That's why most of them have implemented this failsafe mechanism in their printers.
