To Amy's answer I would add:mere labels in themselves will not stop your emails being used as evidence in Court - otherwise every criminal would have a get out of jail free card, as it were.likewise mere labels are unlikely to make a communication legally private in character - that will be inferable from content and context. On the other hand, if if I want to say that this email, as distinct from all my other emails, is of a confidential character, I begin the subject line with "IN CONFIDENCE". If I want to say it should be read only by the recipient, then I add "PRIVATE". It's a bit like marking content as legally "PRIVILEGED" up front (for lawyer-client matters). It won't magically stop police, opponents etc from reading it, but if you expect them to then it makes it harder for them to use against you in legal processes rather than intelligence, and it may ensnare them in professional conduct issues, if they're professionals. (For that same reason I tend to soft-partition my computers into Privileged and Non-privileged areas, and constrain desktop search tools)
