Vegan Recipe Help Needed.

Help! - I need a recipe for Macro-Vegan sesame noodles!! Can u help?

I'm not sure if this would be considered macrobiotic, (It has always been really unclear to me exactly what that entails.), but here's a good recipe for vegan sesame noodles that I've used before.

1 lb udon or soba noodles (I prefer soba)
3 T tahini
2 or 3 cloves minced garlic
2 t minced ginger
2 T tamari or soy sauce (I use Bragg's liquid aminos)
1/2 t chili powder
1 T maple syrup
1/2 t apple cider or rice vinegar
2 T or more sesame seeds
1 or 2 T sesame oil
2- 3 chopped scallions
1/4 lb snow peas
2 T chopped coriander (I use dried, just to taste)

Cook noodles, drain and cool. Mix all the ingredients except the snow peas, coriander and scallions. Taste and adjust seasonings as necessary. Thin with water if too thick. Add noodles and raw snow peas and toss until well coated. Sprinkle top with scallions and coriander.

Help - Chicago Diner Vegan Mac & Cheese Recipe?

My family visited the wonderful Chicago Diner this past summer and enjoyed their fabulous vegan mac & cheese (plus other great stuff!!). Now that we are back home and hundreds and hundreds of miles away from its creamy goodness, we'd like to try to duplicate it. If you have the recipe, please pass it on. We promise we won't use it for anything except stuffing our vegan tummies at home - no business venture :)

I need a good vegan coffee cake recipe?

Vegan Coffee Cake

Ingredients:

1 cup soy milk

1 tbsp distilled white vinegar

2 tbsp water + 2 tsp baking powder (mix this together, this serves as an egg replacer)

2 1/4 cups wheat flour (or your flour of choice)

1 1/4 cups brown sugar (you can also try palm sugar)

3 tsp cinnamon

1 1/2 tsp ground ginger (or freshly grated ginger)

1/2 tsp salt

3/4 cup vegetable oil

2 tsp baking powder (yes, more baking powder)

What to do:

Mix the flour, sugar, and 2 1/2 tsp cinnamon, ginger, salt, and oil. Transfer 1 1/4 cups of this into a small bowl and add the rest of the cinnamon to the small bowl. You may also want to add more sugar if you have a sweet tooth like me.

To the remaining flour mixture add the dry baking powder. Mix together the soy milk, vinegar, and water + baking powder mixture, and then add to the flour mixture. If, when everything is mixed together, it is soupy, add some of the flour mixture you put aside. This should have the consistency of a cake batter, not soup!

Spread the batter in a 9 x 13 baking dish and sprinkle with the remaining flour mixture, if your batter is too soupy the topping will sink in (you may want to add more sugar and spices such as cardamom to the topping mixture, you want enough topping to cover the entire cake)

Bake at 350 Fahrenheit or 150 C for 30- 35 minutes.
best of luck.x

I need help eating healthy as a vegan?

Well, you just haven't done enough research. The solutions to your issues are all going to be found with just a Little Bit of research. And I can give you a leg up.

First thing I will suggest is a book, which is more than a little bit of research. but you don't have to read it all at once. Actually, there are two books - but they are so similar I would just suggest you get one or the other. (Check out the library - they are probably both there). The first one is "Eat To Live" and the other is "How Not To Die". both are versions of the Whole Food Plant-Based Diet (Forks over Knives). And both diet books are compatible with veganism. Basically, it's vegan without sugar and oil.

Both of these diets can be used as weight loss diets or just regular eating healthy diets.

If you have more time to listen than to read then you can really educate yourself quite nicely with Podcasts. My favorite is the" Food For Thought" podcast. There is something like 12 years of shows. Start with the oldest one and work yourself up. It's easy to listen to a podcast while driving or walking or working out. You can even listen while shopping and house cleaning. Colleen is a pleasure to listen to and one of the smartest vegan chefs out there.

Next suggestion is a good vegan cookbook or website. One of my favorites is the Minimalist Baker. It is a little overwhelming at first but it is searchable. Try searching for "7 ingredients or less" or "One Pot" to find the simplest and easiest recipes.

Last suggestion is a YouTube channel. It's called Cheap Lazy Vegan. It's a cooking show. And all the recipes are easy and cheap. Rose has a website and a cookbook. There are hundreds of recipes but she has organized them plus there is a search feature.

OH. one last suggestion. PETA has a recipe book for College Student Vegans. It is probably at your school's library and book store.
