What is the origin of derogatorily calling police officers "pigs"?

The use of the term “pigs” in reference to the police as others have noted, came about in the 1960s and likely arose from the friction between the nascent Black Panthers in the SF Bay area and the Oakland Police dept with who they have several memorable conflicts. I also seem to recall that there was some popular rock and roll LP album art that also depicted police officers as pigs. I do recall that many left wing publications of the time often depicted in their illustrations police officers as pig faced individuals.

The term was adopted by the more militant elements of the anti Vietnam war movement and really burst into the common lexicon as the institutional reaction to the anti-war movement became more violent. i.e., Chicago 1968, post Cambodian invasion 1970, Kent State and Jackson state student killings by national guardsmen and the ever growing anti-war demonstration throughout the major cities and campuses of the nation. The reference to the police as pigs was already in common use in the Afro-American communities following the Watts rebellion of 1965 and particularly in the post King/Bobby Kennedy assassinations.

Miroslav Filipovic, known as ''Friar Satan'', was an ex-catholic priest from Croatia. He was excommunicated from the church by the Holy See in 1942. because of numerous atrocities against civil population in Croatia. Only in one day, he butchered 52 children in village Sargovac, during class in their school, in front of their teacher. He killed 56 Bosnian Jews with an ax, after he rounded them up like a cattle, and bind them with a barbwire. He was one of the administrators of Jasenovac death camp, lesser-known but probably the worst death camp ever. ''Fra Satan'' was killing Serbs, Jews, and Gypsies mostly with his knife or bayonet. The major entertainment for him was to walk through his death camp and search for mothers with children. Then he would approach them with a smile, pretending that he was a nice man searching for a chat. Then he would lift a child, never losing a smile on his face, and then he waited for a child to fall on his risen bayonet.

Even German Nazis were disgusted with that. They tried to arrest him, but the Croatian war president Ante Pavelic protected him. General Edmund Glaise-Horstenau wrote letters to Oberkommando der Wehrmacht, informing them about atrocities in Croatia, but Berlin never replied.

Ljubo Miloš - also one of the administrators in Jasenovac Death Camp. They say that he was mentally ill, and even his comrades were afraid of him. He was proud of his invention - ''The ritual butchering of Jews''. He was killing prisoners with a knife of his gun, but he was also killing children with crushing their heads up against the wall. After the war, he was caught, and he was probably the only one who had willingly admitted all his crimes. When they asked him about killings of children, he answered with a calm voice ''They too were liquidated in the same manner as adults''.

There were many other members of ''Ustaše'' (Croatian Nazi army) but those two are probably slightly worse than the others.

SS Obergruppenfuhrer Reinhard Heydrich, aka “Hitler’s Hangman”, was, of course, the architect of the Final Solution. Heydrich would travel around the Eastern Front to make inspections, the local SS commander would call his unit to be inspected, and then Heydrich would ask “How many Jews have you killed here?” and complain vehemently if the number was too low.

Heydrich is especially scary because although he was every bit as psychotic as Hitler, Heydrich was fifty IQ points smarted than Hitler. It is terrifying to think what sould have happened if Heydrich had taken over the Nazi party in 1942.

To me, a good answer to this question is SS Gruppenführer Hermann Fegelein.

Fegelein was a man of minimal education. He never attended officer training school. Yet he had risen to SS-Gruppenführer by age thirty-seven.

Hermann Fegelein was one of the great killers of the whole war. He commanded the SS Death's Head Calvary Brigade during the invasion of Russia. Fegelein was a destroyer of towns. Fegelein’s men killed without mercy, reason, or fear, and did not stop until there was nothing left to kill. When they went on an operation, they killed every man, woman, child, horse, cow, pig, goat, goose, chicken, and duck. Then they fired the buildings. Hundreds of villages in White Russia fell victim to his command. Tens of thousands of Russians were slaughtered. He was awarded the Knight’s Cross with Oak Leaves in March 1942.

Fegelein does not appear just another two dimensional Nazi psychopath - he was a psychopath but also a player, a sportsman, he had a sense of humor and, notably, demonstrated significant personal bravery while under fire (it is credible that he once tossed an explosive charge into an enemy bunker - it is credible because he talked about how frightened he was when he did it).

Supposedly, fields of bones could still be seen in the areas where Fegelien operated for decades after the war.

He was wounded by Russian snipers in 1941 and in September, 1943. Fegelein married Eva Braun’s sister Greta in June of 1944.

He was SS liason to Hitler in January, 1944, and was wounded in the 20 July bomb explosion. He was executed for desertion on 28 April, 1945. Supposedly Fegelein said “I did not sign up to be part of a suicide pact.”
