A small Dhaba. Statistics say Pakistanis on average spend upwards of 40% of their income on food alone.Besides this fact, I have had the privilege to see numerous dhabas gradually evolve into restaurants. Some examples are - 1) I remember a Biryani stall on the main road leading to Baloch Colony, Karachi. It went by the name of Naseeb ki Biryani. The guy cooked Biryani in a huge container nearby and then sold it out on a daily basis. Within a couple of years, he had enough money to rent out the vacancy right behind his stall and began a dine-in. After this, he rented out another vacancy opposite to his stall just for cooking biryani. I must say thou, the guy made one hell of a biryani. This was in the years 2004-2008.2) Another example that is still fresh brings us to the city of foodies, Lahore. I used to live in a hostel in Faisal Town during 2013-2015. The eatery options nearby were limited for a pedestrian. That is, until another stall or "Thela" was set up on the main road right next to my alley near grocery shops. This guy was in the business of providing naan, anda and channay for breakfast, lunch & dinner. His business boomed during Ramadan. And within an year, he opened up a shabby restaurant in the vacancy behind his stall by the name of Bismillah hotel. He now serves a variety of cheap staple dishes everyday and has also inspired another person to set up a stall right opposite to his own.Believe me, hire a good cook, equip him with the right tools and find a good spot to set up a stall. Set up one bench next to your stall for people to sit and eat. Just one bench. After that, just hang in & watch your business grow!
