Which traditional martial art best teaches how to defend against the shoot or leg takedown?

Let's look at this scientifically. Is there a type of event where you can watch wrestlers and others attempt shoots against a wide range of martial artists?  If so, which defenses work best against shoots and who are the best at using those defenses? It would be great if there were thousands of matches available on video to watch for ourselves. It would be awesome if we could watch these matches at bars across the country on Saturday nights while drinking beer. Ah, such events exist and have existed for years. MMA. Check out early and foreign MMA matches when practically everything was legal. You had Judo, JJJ, BJJ, Sambo, Freestyle and Greco Roman wrestling, plus backstreet brawlers of all types. Who dominated against shoots? Freestyle wrestlers and to a lesser extant, Judo, Greco Roman and Sambo guys. Who got killed? Karate, Kung Fu, TKD, Boxers, Kickboxers, etc.. Nobody with any real experience pays any attention to the "secret anti-grappling techniques" TKD, Karate, Kung Fu or RBSD guys were hawking in the back of Blackbelt Magazine twenty years ago. That debate was settled years and years ago and talked to death on the internet ages ago. If you want to beat a wrestler, learn to wrestle. If you want to beat a boxer, learn to box. If you want to beat a Kung Fu guy, learn to fight.

Professional boxer / martial arts vs. brutal animal?

It is possible but very difficult. Like you mention Nicolai Valuev kill a boar and someone else mention Mas Oyama defeat a bull. In China long ago a martial artist fend off a tiger. This is my recommend techniques:
1. Boar is dumb, it will just lunge at you head first. So you back yourself against a tree and sidestep it at the last moment. Let it gore the tree and knock itself out.
2. Bear will get on it two legs and try to paw you so you go low and kick it hard in the balls.
3. Gorilla will pound it own chest so you poke his eyes out while he is doing this...
4. A pit bull is just a dog so if you wear boots, just soccer kick it head.
5. Tiger or lion will leap at you so you have to go low, let it fly by and why it fly by and you are underneath, you just reach out and grab his balls and squeeze with all your strength.
Please don't misunderstand me, there are no fool proof to these techniques because if your timing is off you will be gore and killed. Like everything else, you have to practice first so ask your friend to pretend to be these animals and rush or leap at you but don't hurt your friends. Good luck.

Martial arts for only fight situations?

Every martial art is for self defense. Every one of them can be an effective means of combat. Your are correct in your belief that some of them take longer to learn than others. I have always thought that Shotokan is fairly simple to get the basic off and through moderate practice you see a certain level of improvement. The same can be said for Kempo. The Chinese arts tend to take a little longer to learn but they are very effective form of combat. You also have the limitation of instructors. You might want to learn Chen style Tai Chi but if there aren't any where you live you're stuck with what's available. In the end, it really depends upon you and what style fits you best.
