What AF mode should I use to manual focus on a 18-135 mm kit lens on a Canon 80D?

… AF is need to be off when you want to use manual focus lens.Considering OP likely have zero experience in this matter,I would suggest to do following.mount your camera to something sturdy like tripod.turn off AF switch at you lens, so it will be manual focus modeTurn on Live view, so you can look at your LCD monitor instead of view finder.use LCD as your reference and try adjust focus.Once you are satisfied, press shutter button.The reason I do not recommend using optical view finder is the fact you are dealing with slower lens, and Canon view finder for entry level~ prosumer model are not really designed to do manual focus at all (it is just really hard to tell without some sort of aid)So, it is far more practical using live view.Have fun.

Is it good to shoot on AV mode with a Canon 80D with an 85mm, 1.8 for portraits? I always put the setting on F2.8 or F1.8, or should I shoot manual?

If you know what you’re doing, use manual. It could give your photo that extra finesse.In most cases, I prefer to use Av mode, (aperture priority) and adjust it to my shooting conditions. I definitely suggest setting your ISO too, if needed. This will usually give you the feel you’re looking for, especially for portrait conditions with ample light. But there are more factors you might need to worry about.Other times, it’s better to use Tv (shutter priority) mode. Other times, it’s better to use manual mode.If the photo looks good, it doesn’t matter what mode you use. But getting it to look good may require shooting in a certain mode, or at least make it that much easier.

Why do you want to set it to infinity? The autofocus will focus the lens at infinity if you are pointing at a subject that is far away. That is if you actually have the lens switch turned on for autofocus. If you want to do it manually, turn off the autofocus; there should be switch on the lens barrel. There will be a focusing ring in addition to the zoom ring. Turn it until objects at a distance are clear. There, you're at infinity.

Bulb mode keeps the shutter open for a long interval, as long as you hold down the shutter release button. It has nothing to do with where the lens is focused. If you're using bulb mode, you'd better be using a tripod. The long exposure will cause everything to be blurred if you don't.

How do I turn the flash off on my Canon 350d?

Obviously you have never used the camera in anything but full Auto mode. The flash will always pop up when the camera thinks it is needed.

Use the semi auto modes such as Tv or A or full Manual and the flash will not open unless YOU push the button to open it.

Frankly, if your knowledge and skill base is this lacking, I don't know how you can be successful with any kind of "photography project". Take time to learn how to use your camera before embarking on some kind of project that is only going to frustrate you because your skill base is not yet where it needs to be.

Have you ever really sat down with your camera in hand and gone through the camera owner's manual? Then do it again, ... and again. Until the camera is not in the slightest confusing to you, you are never going to realize it's potential and your photography will never be exceptional.

Canon Rebel XT 350d Vs. Nikon D3000?

I have the canon now, and im looking to get a nikon because i know theyre better than canons, but im on a small budget so the only thing i could afford would be the d3000. would it be worth the money to buy it since its like the lowest quality of the nikons? would my canon be better? someone help please :)
