I will explain why about the new products:CH3COOH + OH- . Since the new product CH3COOH itself still undergoes dissociation slightly into CH3COO- AND H+ with water molecules. It should reduce OH- concentration slightly cuz the oh- concentration from sodium acetate is still lots larger than h+ ions concentration produced from acetate.

I know that Sodium polyacrylate is found at Garden stores but what is it called there?

It is called ASAP but not all garden centers may have it. You can take the same crystals out of an unused disposable diaper. Be careful you don't breathe them in or get them in your eye because it doesn't distinguish between water or bodily fluids. To me the benefits are not worth the risk
