You're not supposed to thaw and refreeze meat. You can however thaw it partially, as long as it's frozen solid in the middle still, you are ok. And remember ground meat must be cooked to an internal temperature of at least 70C (160F)

Is this hamburger meat bad?

I bought a whole bunch of hamburger meat at the grocery store because it was on sale, and put it into the fridge so I can separate it and put it in freezer bags before I put it into the freezer. Well, I put doing this off until about 2 days later when. At this point the meat was just starting to turn brown. I hurried up and put it in the freezer. I've been iffy about using it because is sitting in the freezer half red half brown. I just now put it on defrost and smelled it because I was going to make meat loaf. There's only a slight odor. Is it safe to eat or should I pitch it?

another test is feed a bit to a cat, if they take it, it's fine, if not.. LOOK OUT. Cats are smarter then Dogs, a Dog will eat it anyways.
Another rule to remember. If it was frozen in a fridge freezer then it will keep about 6 months.
If it was frozen in a deep freezer, then it will keep for a year.

Fresh meat should be brown, but manufacturers put dyes into it to make it look redder and more appealing to the public. If you have ever eaten deer or moose meat the meat is a brown color and not the bright red. It's true if you see a metallic green or the meat smell "sour" then "When in doubt throw it out!" Having food poisoning is not a pleasant thing to go through.
If you have frozen raw meat and cook it and there are left overs then you can refreeze it. YOU CAN NOT thaw raw meat and then let it sit around and refreeze it.
Believe it or not I smell all my meat, as odd as it may seem, especially ground round (for hamburgers), steaks and roasts. For chicken, chicken pieces, or turkey, I put in cold water with a 1/2 cup of salt and that kills any bacteria and then rinse well, pat dry with paper towel and then cook.

Beef muscle meat not exposed to oxygen (in vacuum packaging, for example), is a burgundy or purplish color. After exposure to the air for 15 minutes or so, the myoglobin receives oxygen and the meat turns bright, cherry red.

After beef has been refrigerated about 5 days, it may turn brown due to chemical changes in the myoglobin. Beef that has turned brown during extended storage may be spoiled, have an off-odor, and be tacky to the touch.

How can u tell if raw hamburger is spoiled?

It's not that the blood has drained out, it's the red food colouring put in the meat to make it look juicy that has drained down to the bottom of the package. When in contact with a small quantity of air, the meat tends to take back a brownish colour. Doesn't mean it's spoiled though.

if your meat has gone of it will have a slightly unpleasant odor will be dark in colour and will also have a slimy coat ,Meat should be eaten immediately after its defrosted and not left for any lenght of time in a fridge it is a very unsafe practice and can lead to food poisoning
