It’s a bit tricky if you’re perception of ENTPs are insensitive, witty talkers. Sure, I’m not afraid to jump into my wit sometimes, but I’d rather think a little bit more about what I’m going to say than just spit out my wit. Also, I’m not too insensitive and, therefore, not too afraid of speaking emotionally, although speaking ENTIRELY on emotion is, in my opinion, not suitable; it’s a quick way for people to call you a b****. When it comes to learning, oh boy! How many times have I raised my hand to the teacher to ask a question about the lecture? If you think someone can beat my record of average number of questions asked on discussions and lecutres, give me their number and let’s see if they (1 can actually beat me or (2 (if they’re a girl), don’t mind to go on an intellectual date. Long story short, it’s not that hard for me to not be engaged in learning things, especially in science class. (The only class I’ve ever been bored with was precalculus.)TL;DR, ENTP 7w6s are usually proud nerds with some warm feelings.

You can give her a piece of dialog to indicate her curiosity. eg. She said, "Oh really? How is that so?"
You can also try to explain her expression, rather than outright giving the expression. eg. She raise an eyebrow, and smiled a little bemused smile as she waited for him to continue."
If the voice of narration is right for the story you could also have her thoughts indicate curiosity. eg She puzzled in her head as to what he meant, was it really one way, or the other? He broke the silence by...
Obviously these are just examples that may or may not fit your story, but you can portray emotion the same way as any thing else.
