Why do UK insurers ask if you have a 5 lever mortice lock on your door? Is this the best kind of lock?

Standard 5 level mortice lock offers medium level of protection. Most insurance carriers require locks that conform to the current British Standard (BS3621:2007). These offer better protection as BS3621:2007 requires a bolt throw of 20 mm rather than the 14 mm of the prior British Standard. Also, most BS3621 locks have anti pick devices built in to reduce the chance of lock picking.

The obvious answer is two levers.

The difference is in security. The 5 lever lock is more secure than the three. Three lever would be ok on an inside door, but would not be recommended for an exterior door.

How do I retrieve a sliding door lock that fell down inside the frame?

This probem happens even to expert locksmiths! Well...sometimes.
To remove the trapped hardware inside the door frame, it would be less time consuming if you and another assistant remove the sliding glass door from its railing (track) and try to shake out the lock at the end of the door frame ( towards the floor side), the door frame may be hollow aluminum. If this is not an option, then simply fish the lock out through the same installation hole it slipped through, use a common coat hanger and have it streched out maybe even attach a refrigirator decor magnet at its end to help pull out the lock. In some areas of the U.S., the lever mortise lock, as it is known to locksmiths, is referred to as a keyhole lock by the customer. This is because of the shape of the hole that extends into the door from both sides. Sometimes referred to as a skeleton key lock.As many of these have been around for a long time and the availability of keys, and or duplication of the keys is difficult in many areas, customers are often wanting to keep these from being used accidentally. Current egress laws, require them to be disabled in many areas.To preserve the appearance on the door, the best way is to remove the handle, and then slide out the mortise lock. Duct tape a piece of tin over each of the keyholes, and reinstall the mortise set. Carefully remove the face plates, then stuff the openings with insulating foam. Reinstall the face plates and knobs. This renders the mortise deadbolt inoperative, and reduces the draft into the occupied area.Another way is to replace the face plates with ones that allow only for the knobs, and do not have holes for the key to pass into.A popular way that does not always get the best result is to remove the mortise lock as above, open carefully the cover (The springs like to fly out), and simply remove the deadbolt and its levers and springs. Replace the cover, making sure the spring latch is still operational. Then reinstall the modified mortise set.Building codes vary significantly. If not sure of them in your area, ask a locksmith, or the building department.

Why don't British doors have door knobs?

I'm assuming you're talking about front doors rather than internal ones? Many British doors do indeed have door knobs or handles. Modern ones that have mortice locks also have handles.It is the usually the modern plastic ones with fancy security locks that just have a small bit of curved metal above the lock so you can grip it to pull the door closed.

Don't imagine that you can judge the whole of British life by what you see on the telly I think you would find that there are more doors here with handles than without. Knobs are less common than handles and are normally only found on older houses.
