Well there's two options. The first gives higher-quality digital video (if you care about that), but is more fiddly. The second is simple, but uses analogue video.

If your Xbox has HDMI out, you can get an HDMI-DVI cable to connect to your monitor. You can pick up one of those at any electronics store, or for a few bucks from ebay. That'll give you the best possible video output, but no audio.

To get audio as well, you'll need to use the original composite/component cable. But seeing as the plug is too big for both to fit, the usual solution is to actually crack the case of the plug open and remove it. That way both the composite/component plug and the HDMI plug will fit in. You'll also need some adaptors to make sure everything can be wired to the line-in socket on your computer. Check my sources for a link with detailed instructions on doing all of that.

A simpler option is to buy the official Xbox 360 VGA adaptor. You should be able to pick up one of those from a game store or, again, from the ebays. That will let you plug in to the D-Sub input on your monitor, and has RCA leads for audio. But, if you want to plug that in to your computer's sound card, you'll still need the RCA - 3.5mm stereo adaptor.

You would have to share the internet connection (from USB to Ethernet), and connect an ethernet crossover cable to the computer and xbox 360 (crossover because you are not using a connection such as computer>router>xbox360. When you take the router out of the picture, you have to use an ethernet crossover cable).
