Any beef roast that is cooked frozen, should be roasted at 300 degrees. Regular roast, not frozen @ 325. Three lb. frozen roast at 300 should take 3 1/2 to four hours. Don't like crock pots because it turns a nice roast into mush. Try and slice it and you get chunks and it's dry. When you pot roast on top of the stove, brown your roast first, turning quickly and then just add just enough water to keep it from catching. Yes, you do have to stand over it and constantly watch. Any more added water and you have boiled (yuck) meat. Boiled meat is not true pot roast.

Meat should be at room temp before roasting...
(approx 2 pound tri tip) Season with coarse salt, fresh black pepper and garlic powder. Place , fat side up, on a rack in a shallow roasting pan. Roast at 450°F for 20 minutes then begin checking the internal temp. remove at 120°F for rare, 130°F for medium rare etc.
Let rest for 5-15 minutes, loosley covered with foil, before cutting accross the grain into thin slices.

Make a nice pan sauce from the drippings. YUM

basically, it depends on the weight of it. a good fool proof method is to put it in your slow cooker before you go to work in the morning along with some sliced onions and whatever seasonings you prefer and put it on low setting and when you come home, it will be done. or you can place it in a roasting pan along with maybe a cup or 2 of water and some sliced onions with some seasonings of your choice and bake it @ 325 for an hour and a half. then, take it out of the oven and add some carrots and celery bake it for 45 min. and take it out again and add some potato chunks in it also and put it back in the oven for an additional 45 min. then enjoy ! (baking times are approx) depending on weight. directions was for a 6 lb. roast

If it's on the bone and you have completely preheated your oven, 45-60 minutes. Just make sure you preheat your oven, use an oven thermometer to check your temp to be sure your oven heats to what you set it for and adjust up or down. I then unwrap them, glaze with my sauce and finish over moderate heat to set the sauce.  Voila!

Although tasteful the tri tip cut of meat is generally not roasted. If you don't want to do the grill bit do it in your broiler. Just rub it with garlic, salt, & pepper. It has such a distinct flavor the meat doesn't need anything else. Depending on your preference about 10 min. on each side would be just about med to med rare...

Instead of weight think of thickness. A three pound tri tip is going to be about 3 inches thick. Here's what I'd do: Let it come to room temperature. Leave it on the counter for half an hour. If you are worried about germs rub the meat with salt, raw garlic and olive oil. Season the meat as you like (I like garlic powder, cumin, salt and pepper). Put the meat on a roasting tray, preferably on a rack. Put the meat in a preheated 400 degree oven. Roast for 30 minutes. Take it out and let it rest for 10 minutes in a warm but not hot place. Slice 1/2 " thick across the grain.

That depends upon many factors. The thickness of your chops, the starting temperature of the meat, it's moisture content, fat content, degree of marbling , where the chop was cut from in the pig, boneless or bone in, the accuracy of your oven and it's ability to reach and maintain temperature, where you place the pan, the material, thickness, color and type of pan you are using all will have an effect upon the amount of time it takes the heat to penetrate to the center of your chops.As many others have already replied, temperature is the only true way to cook meats correctly. The exact amount of time will always vary. Get a good digital instant read thermometer, or probe thermometer so you know what the actual internal temp is.And 400 degrees F is a bit high to cook chops unless they are breaded/coated. Too high a temp and the outside of the meat will be dried out by the time the middle is done, especially with a thicker chop, and a thin chop will be jerky or sawdust in no time. Try it at 350 F first with your new probe or instant read digital thermometer and you will see how long it will generally take, and don't forget that thicker chops will continue to cook after they are removed from the oven, so you might want to pull them 5 degrees early.

You have a couple choices. You can braise it or roast it. Either way season it with a dry rub, make sure there is salt in your rub, and let it sit over night. If you are going to roast it, you should roast it slowly, but anything roasted at an oven temp over 300 degrees is not going to roast slowly. Ideally you want to roast at 200-250 degrees. A lower temperature will cause the meat to cook evenly throughout the roast, which means your roast will look medium-rare or medium through the entire piece of meat not just the middle. But in order to get a crust on the outside and some color, sear it in a hot pan with oil on all sides before you roast it. It will take about 4 hours to cook maybe, just keep an eye on it and check it every 45 min or so to see how it is doing.
If you want to braise it, you need to sear it first. Then in the pan you seared the roast, saute some diced onion, carrots, and celery, then deglaze with red wine, and scrape the bottom to get all the good stuff that may be left from the roast. Put all this into your roasting pan, add the roast and some seasoning, then add beef stock. Put it in the oven at 250 for about 4-5 hours. You can degrease the cooking liquid when its done, strain it, thicken it and you have a nice sauce to go over it.
