If you have not experienced immediate effects: an
upset stomach within 24 h, or enteritis (diarrhea,
cramps) within 2 or 3 days I guess there is nothing to
worry about. Some pathogens may take longer to cause
troubles in certain individuals (up to 1 week to show
symptoms) but usually other members of the family
would be telling what is going on sooner than that.

Eating molded or otherwise spoiled food is not
healthy, but is not a severe threat either. Most
bacteria and molds will not survive the acid in your
stomach, and the disease-causing (pathogenic) bacteria
would have to compete with other bacteria that feasted
on your meal. Pathogenic bacteria may have multiplied
during non-safe storage, though the growth you saw was
likely due to other bacteria, which may have even
prevented growth by salmonella and it's unpleasant
cousins. Apart from eating life pathogenic
microorganisms, the other danger is their toxic
metabolic products. These often cause acute symptoms,
within 12 hours of ingestion.

If you are worried you could, as a precaution, take
absorbing activated coal or absorbing salts that will
bind bacterial toxins. Most people, however, have an
immune system that can deal with these problems. More
care should be taken for young children, elderly
people, pregnant women and people with immune
deficiencies, or those who already have an infection.
Those people have a weakened immune system and will be more susceptible to infection.

Long term effects are very unlikely.

Again, there is no simple answer. It ranges from nausea and vomiting from ingesting any molds containing those toxins (e.g. vomitoxin in damp wheat), to a couple of decades if the mold was Aspergillus flavus and the toxin was aflatoxin, resulting in malignant tumours.But- reality check - the odd slice of moldy bread is not likely to strike you down with some dread disease. The mold may be a penicillium-type, and you would in most cases experience no harmful effects. (But try to avoid moldy foods where the type of mold is unknown).

Hello. Yesterday my sister accidentally ate a sandwich that had moldy bread. Today she said she didn't feel good and that she has a sore throat. She's been asleep the last 3 hours.

Do you think she caught something by eating bread that was molded or is there a chance she picked up a bug at work? (She works at a children's daycare)

How sick can you get from eating mouldy bread?

I bet everyone has done this at least once. I know I have several times. I have gotten extremely sick from eating bread mold. But I hadn't noticed it was moldy until after I'd eaten a slice. Guess I was hungry. Yes, penicillin is derived from bread mold, but it is not just the mold. We cut mold from cheese, most cheeses. And even though we eat some cheese because of their mold (bleu cheese, roquefort), dairy mold is different from grain mold.
Anyway I ate the the bread, and I didn't get sick. I ate it another time and within a few hours after eating moldy bread I had stomach cramps, sweating and feelings of nausea. While diarrhea keeps me confined to the bathroom, (sorry for the graphics) and vomiting also was not the greatest.
Moldy grain products are a problem especially in warm and humid weather.
People talk about 24-hour and 48-hour "bugs" --sometimes even call their symptoms "flu." There is no such thing as a 24- or 48-hour bug. It is food poisoning. Symptoms can be mild or severe. Onset of food poisoning symptoms can occur nearly right away -- as it did when I ate a tainted lobster cocktail -- or a few hours to maybe three days after ingestion. Depends on whether the bad food is animal, dairy, or grain. I know nothing about fruit or vegetable mold. Maybe because it is so easy to see or smell.
Summer is often a difficult time for keeping certain foods. But my final advice is "if in doubt, throw it out." Easier and safer to borrow a couple slices of bread from a neighbor. Or eat crackers. They last indefinitely. In summer, I buy more low sodium crackers than bread.

I made some flat breads not so long ago but made too much dough so I put the breadboard and leftover dough in a cupboard I don’t use in my kitchen meaning to deal with it later, I went out and completely forgot about the bread dough, a week later I was extremely, violently ill, I couldn’t eat or drink and was constantly vomiting, after a couple days of shaking, sweats etc (it was awful!!) I dragged myself to the computer to search my symptoms and the only thing that matched was food poisoning but this didn’t make sense because I couldn’t even drink I was that sick! then the penny dropped! I went in to the kitchen to find a blue/black lump in the cupboard and then I realised there was black fluff over everything in my house also! my bread had turned into an airborne toxin and my house was now a biohazard! :)

How likely is one to get sick from eating moldy food?

Depends on the mold and what you did with it. Some molds produce so-called mycotoxins which can make you ill. Many of those are killed via heat, so if you cooked a moldy food it'd likely taste like crap but won't kill you or make you very sick.The dose, as Paracelsus said, makes the poison. If the mold is new (~5h), the amount of mycotoxin on a small patch isn't dangerous. Large patches of mold, however, can make you vomit or have diarrhea.Cut it off and you're fine, mold is topical so if you remove the patch you're fine to eat the food (within reason, there's a cause for mold, did you leave to food out too long?).Lastly, some food require mold (not every mold is bad, penicillin is derived from mold, blue cheese is moldy by design, and many dry cured meats develop surface molds), so you'd have to be a little bit more specific :)
