FOR THE CRUST :No matter how good the filling, the crust is the showcase: a good homemade crust takes a pie to new heights.

There are four basic ingredients in a pie crust: flour, fat, water and salt. You can come up with all kinds of tasty variations just by changing your basic ingredients, as long as you stick to the ratio of three parts flour, two parts fat, and one part liquid.


3-2-1 Dough

Flour: For a tender crust, choose a low-protein flour. Pastry flour, with a protein content of about 8-10%, ranks between all-purpose flour and cake flour. All-purpose flour works just fine for pie crusts, while cake flour may lack enough protein to form a workable, elastic dough.

* Depending upon your tastes and the recipe, you may substitute nut flours (almond flour or hazelnut flour) or whole wheat pastry flour for part of the mixture.
* If you're a novice crust-maker, start with a plain all-purpose or pastry flour dough.

Fat: Flaky crusts can be made from a variety of fats: butter, lard, shortening, duck fat, vegetable oil, or nut oils.

* Crusts made with all butter are very flavorful, though they are generally not quite as flaky as crusts made with shortening or lard.
* Vegetable shortening pie doughs are easier to work with and hold their shape better than all-butter crusts, but the flavor won't be as rich.
* Lard produces the flakiest crust, but processed lard can have a chemical aftertaste. Some butchers or farmers' market stands may sell fresh rendered lard.
* Some of the best pie crusts are made with a combination of fats: half butter, for flavor, and half shortening or lard, for flakiness.
* Fans of crispier crusts use melted butter or oil for the fat, resulting in a mealier dough that bakes up as a fine-textured, crisp crust.

What is hot pot?

Let me just say something about hot pot from Chinese perspectives.(My understanding of hot pot.)Basically I think hot pot is exactly what its name tells - you got a pot and it is always hot.First, there's a pot, and then you got fire or heater underneath to keep the water or soup inside boiling. The quintessential part of hot pot, I think, is that boiling soup. The soup contained mostly seasoning and some vegetable. If you like spicy taste, then you can choose a spicy flavor at a restaurant or add seasonings when at home; if sour taste, then maybe tomato flavor is good.Foods are most raw. The most common food in a hot pot cuisine would be mutton and beef, which are thinly sliced.(Photo credit: 火锅配菜图片-全景图片)Seafood like shrimp, cuttlefish are also common. So are vegetables. You can also have noodles and dumplings (jiaozi) in hot pot.Condiments (the thing that you dip your food into, in the left bottom corner of the image): you can have anything you want. My personal favorite is sesame sauce, exactly the thing in the pic.When eating, you simply choose your food and put it into boiling water for seconds or minutes, depending on what food you threw in, to make it well-done (cooked?).  Now in China, there are not only hot pot like what Shane said that gives people "an opportunity to share food with other people", but also small hot pots that people can eat alone like Xiabuxiabu.

Do you like eating hotpot?

Of course. It’s tasty and easy to make at home. I like to eat hotpot, especially in winter. You just need some hotpot soup base and put them in the boiled water. That’s it. You could put anything you’d like to eat in hotpot, even if you are a vegetarian. Besides the hotpot soup itself, you could also make a dipping sauce for yourself, coz people have their own favorite flavor. The best thing about it is to share it with your friends in winter.

There are various types of hot pot. The one you are talking about sounds like an Asian hot pot such as Japanese and Chinese hot pots.

You don't need to have an Asian hot pot or firepot. Aluminium, steel and electric fondue pots can also be used.

This is a video on how to make Lancashire hot pot which is a traditional English dish. Lancashire hot pots are traditionally made in casserole dishes or earthware pot which are left to slow cook in the oven all day

How do I cook the potatoes in a Pot Pie?

I boil them in water before i add them to the pie.
You could boil them with the carrots.
You should also saute the onion and celery before adding to the pie.
