There's no simple way to cancel it even at this point. Even if you delete the message from the conversation thread — even if it is still in the process of being sent —your iOS device will still attempt to send it out in the background. Deleting a message only deletes your local copy of the message. About the only way to cancel an outgoing iMessage is to force it to fail to send before it finishes sending. For instance, if you were to kick your iOS device into Airplane Mode fast enough — basically immediately after hitting the "Send" button before it can send the message to Apple's servers — the message should eventually fail to send (this can still take a few minutes before iOS gives up, even in Airplane Mode). At this point, unless you choose to resend it manually, it won't be delivered to the recipient, regardless of whether you keep the local copy on your iPhone or remove it.
