Is it better to force a login/signup to use an app, or let users use it freely, until they hit a feature that requires a login?

Although I'm tempted to start with the classic consultant "it depends...", it's pretty well documented that in almost all cases you should let users experience the app before having to sign up for a service. This has to do with Nielsen's third heuristic, "user control and freedom." Users feel anxiety about providing their information to applications that they aren't certain they will use. Let them take it for a test drive and if they like it, they will sign up. If they don't like it, guess what? You have a worthless user account and someone who feels a little resentful of your brand. That said, there are two notable exceptions. If you are only concerned with signups (a vanity metric) and not actual user engagement (such as monthly active users or paid subscribers), then you may find that you might get more signups by forcing it on your users. This is a dark pattern and probably not creating goodwill toward your product or brand, but some people still do it for this reason. The other exception is mobile. It seems that the majority of iOS apps have a login/signup wall before you can use them. I think that the reason for this convention is that for native mobile apps, the true barrier for users is actually the download. If someone is willing to find your app and download it from the app store, the registration step is trivial.

By allowing login via OpenID (logging in via Facebook, Google account, etc.) for an app/web service, what data is this giving to those Open ID providers? Am I essentially giving them everything by allowing their login vs. email?

OpenID essentially shares the id, you don’t get any other info and you are not sharing any either. The customers have given additional information to the openid provider already and you do not get this info unless you ask your user again.

What are the advantages of using Facebook login on your website? What kind of information do you receive from the user and from Facebook?

Some that come to mind:1. It gives users a simple, fast, and secure way to login to your site.  No need for them to remember another username/password combination.2. Authenticity. For example, news websites have seen the quality of their article comments improve dramatically after implementing Facebook Login.  No more trolling3. Personalized experience.  For example, using Facebook Login with Yelp allows you to see when your friends have reviewed restaurants or places you're interested in going.4. We've redesigned our Login dialogs to make it more clear to users whether they want to allow apps to share on their timeline.

What are the pros and cons of using user sign up with Facebook and Google for a mobile app?

In my mind, the cons of having a Facebook/Google sign-up for an app outweigh the pros in most cases. Here's a listing of the pros/cons:Pros:1. Removes the friction to create another account.2. Enhances the "social" experience if the app needs access to existing friends.3. The app can pull in extra meta-data (likes, profile information) without the user having to provide them again.Cons:1. Makes the app more reliant on Facebook and Google. If they don't like how popular your app is and may see you as a threat, they could block your app's access (see References [1] [2]).2. Some people don't want to share information with Facebook for fear of spam to their feed. Or don't want to give access to their Google account because it has private and sensitive information.3. Some people just don't have a Facebook/Google account. If your app does not need specific profile information, adding a user sign-up will just add friction. Provide a great app experience without any sign-up, if you can.Quite a few apps (think Whatsapp) require you to just enter your mobile-number to uniquely identify you. And use your phonebook as a friend list to build a unique and better social experience.[1] Facebook Blocks Yandex’s New Social Search App From Accessing Its Data Just Three Hours After Launch[2] Exclusive: Facebook Blocked API Access to Ping After Failure to Strike Agreement, So Apple Removed Feature After Launch
