Eating burnt food Bad?

Yeah eating burnt food is potentially hazardous to people's health. We learned that combustion of various items form polycyclic aromatic hydrocarbons (PAH) which are pretty potent carcinogens. Our body usually tries to detoxify these substances via your cytochrome P450 enzymes which turn these PAHs into epoxides and than later biotransformed into other much more polar compounds making them more excretable. The problem is that some PAH isomers have a configuration that allows them to form epoxides, but bypass biotansformation keeping them in epoxide form. This is really bad because carbons near the oxygen of the epoxide are highly electrophilic and thus are more reactive with DNA, which is nucleophilic. This interaction causes interruptions in transcription and translation aka mutation which than leads to cancer eek. Our bodies have other ways to deal with PAH so this is why people don't get cancer every time they eat burnt food, but if people override the system with a lot of PAH (smoke cigs, eat a lot of bbq) than cancer will be a lot more likely to develop. This is the science behind why burnt food is bad. which can usually be over many people's head so people just say burnt = bad.

Yes burnt food can make your stomach hurt and its hard to digest, it's not very good to eat.
But you should be okay if it was just a little. The burnt part is just really bitter so that will also contribute to stomach upset. Charcoaled food can damage your body,the carcinogens can cause tumors and other chemicals in it can cause cancer. Burnt oil has other effects and can clog atteries.
HOWEVER, don't worry, this is only in larger doses regularly, you should be fine after your stomach ache. :) As far as I know it hasn't been proven to be harmful except in relatively large doses, or regular build up. If you're the type who like to cook your food until it's burnt, then you might want to stop. However this was an accident, so good luck, your stomach pains should go away at some point. Charcoal is actually used to remove toxins from your body by poison control :)

First of all, it destroys virtal nutrients. Most food should be cooked just enough to make it palatable and easy to digest (if that much). Any extra cooking doesn't add to the taste (it can be argued) but does destroy the most fragile vitamins.

More importantly, the more cooked a food is, the higher the concentration of carcinogens init, especially acrylamides. Acrylamides are formed in cooked carbohydrate-rich foods like bread, potatoes and pasta. Acrylamides are classified as probable carcinogens, and are known (in high enough concentrations) to cause tumours in laboratory animals. Acrylamides are created when the carbohydrates are heated. The hotter the food is cooked or the browner the food turns out, the more acrylamides in it.

It would be impossible to completely avoid acrylamides if you still want some bread and potatoes in your diet, but you can minimise them by minimising fried foods and how long you toast your bread for.

Burnt meats aren't much better. The amino acids in the proteins can change chemically into pre-carcinogenic forms. Similar things can happen to coffee from the process of roasting the beans. Grilling meat can also cause carcinogenic effect.But you could low fat meat and trim off the fat.Grilled veggies are definitely good.

Why is it bad to eat burnt foods?

One you can get cancer, (mom's a nurse) and you don't want to know the results after they tell yo have cancere. Lik me before, when i was twelve, i used to eat burn't toast, burn't cereal, and burn't chicken on the daily baises, until my mother told me that you couldn't eat burn't foo. It can really damage your tissues, since that is what cancer does to you. So, never make your kids, (if you have any) or any of your guests eat burn't food. That normally why schools and restaurants never give you burn't food, either they can get sued for it.

Yes it is bad for you...acrylamides are chemicals produced when you fry, grill or roast. These are carcinogens and are highly dangerous for you.
Eat a lot of dark leafy greens to help clean out the liver and digestive tract so your body can assimilate food better and be able to detoxify itself.
The National Health Institute said "MeIQ, MeIQx, and PhIP are heterocyclic amine compounds formed when meats and eggs are cooked or grilled at high temperatures." These compounds are also found in cigarette smoke.

I'm sure you're not interested in eating burnt foods...but if burnt means bbq to you, then be careful about how much of it you eat.
Otherwise, if it's just burnt food that happened while cooking, you'll be fine because you probably won't eat it because it'll be, well, inedible.
