What are some variants of Dosa other than the regular ones?

Here are a few variants that you can try. I am trying to also reduce waste as well.1. Grind the white portion of the water melon, which we normally throw away with soaked rice & udad dal. You will require lesser water to grind. Ferment and use as dosa batter.2. When soaking rice, add some methi seeds to the rice. Grind as usual. Dosas will come browner & crisper and it gives a nice taste. Alternatively after grinding add chopped fresh methi leaves or drumstick leaves. Tastes wonderful3. The fleshy portion of the jackfruit, between the thorny skin and the pulp (which is normally thrown away) can be boiled, shredded and cooked with mustard, udad dal, curry leaves, green chillies and grated fresh coconut tempering with oil. Use as masala filling, instead of potatoes. It tastes like chicken3. In fermented dosa batter, add beaten egg whites or whole egg (white + yolk) and make egg dosas. DO NOT ferment the egg as well; it could be dangerous to health4. Roast the innards and skin of pumpkin (this is normally thrown away) with a little oil, till it welts. Remove and keep separate. In the same oil add little more oil if necessary, roast udad dal, chana dal, coriander seeds two or three red chillies as per taste, some curry leaves and a very small ball of tamarind. Add salt as needed. Grind all as a thick paste. When making dosas, after it is slightly cooked, spread the paste (like mysore sada), cook till dosa is crisp, roll it and eat. Do NOT cook the side on which the paste is thereI am giving recipes with items that are normally not used and are thrown away. This is called sustainable cooking.
