Anyone know the Physics of an ASTROBLASTER?

It's a conservation of momentum problem, basically. The simplest version is two balls, like a tennis ball on top of a basketball.

You drop them, and the bottom ball hits the ground, having a collision with the Earth. Since the Earth is so huge, the bottom ball basically just reflects back with the same speed in the opposite direction. Now it collides with the small ball. Just as the big ball picked up a lot of energy from the ground, the small ball picks up a lot of energy from the big ball, and rockets away. It's more effective than just bouncing the little ball off the ground because the big ball is moving to start with, rather than stationary...like the difference between bunting and swinging at a baseball.

If you could only pick one, would you rather study nuclear physics or particle physics, and why?

It depends on the personal taste. I myself have started my career as a nuclear physicist but then switched to something intermediate between traditional (low energy) nuclear physics and high energy particle physics. This is an interesting territory where nuclear physics meets particle physics. For this reason at LHC part of its operation time is dedicated to Pb-Pb or p-Pb collisions which allows to study bulk properties of hot nuclear matter currently called quark gluon plasma.Heavy ions and quark-gluon plasma If you really hesitate between particle and nuclear physics this is maybe a good road for you to follow (?)

Physics: In quantum mechanics lots of things are in "unknown" state until the actual observer starts his observations. Does this happen when the observer is an animal? What do you think?

What is meant by the "observer" is any form of observation of the physical system. Since the only way to get information about the system is letting it interact with another physical entity, we inevitably disturb the studied system. The "observer" can, for example, be a photon that interacts with say the electron in a double slit experiment and is afterwards collected by a camera. Whether there are any humans involved, or dogs, or robot is totally irrelevant. What is important is that by measuring=observing the system we disturb=change it and this is the significance of the "observer" you are talking about.
