As far as dining, your hotel is centrally located and you can pick & choose as you like. Sorry, I would recommend some places but I don't know what you like and Houston has it all.
If the consierge at the Derek doesn't know about what you are interested in just call the St. Regis Hotel (formerly The Ritz-Carlton & is only a couple blocks away from your hotel) and ask for the consierge...he will answer all of your questions and you are getting a free service as they will presume that you are a guest there & are paying a fortune.
I know...dishonesty isn't good but you only have ONE weekend...Make the best of it and please don't think badly of me.

From Lancaster, PA, I drove to Madison, WI where I gazed at the beautiful lakes and magnificent capitol building. Then there was the lovely drive to West Springfield, Mass. That show was always late fall. I drove through charming New England towns with maple trees just losing their red leaves. Virginia! What can I say? Horse country with sweeping views and blood stock horses that cost more than my house!I have the capacity to thoroughly enjoy myself with no one else around, which is a good thing, because I was totally on my own for these events.But. . .all good things come to an end. The work was very heavy and the days very long. After 8 years, I retired even from that. But I sometimes kick back and reminisce over the beautiful stretches of road I covered.
