How do you keep tortillas from shrinking after rolling?

are you making flour tortillas? I'm assuming you're making flour tortillas since they are shrinking after rolling.

If so, I'd recommend that you let the dough rest when you make little dough balls and let tortillas rest again after rolling to size.

How to cut too much lime taste out of Chicken Tortilla Soup.....?

Hi - I always make a great Chicken tortilla soup - tomato / chicken broth base...and this time I decided instead of just squeezing a little lime juice into it - I cut the lime in half and boiled the open half in the soup. Anyway - I took the lime out and added more tomato paste and some more broth...and it still tastes too "limey".... any suggestions? (having a dinner party in 2 1/2 hours)

How to defrost flour tortillas?

We like to make breakfast burritos about once a week using packaged flour tortillas. We usually use a couple of tortillas from the package then seal and freeze it for future use. However, when we subsequently remove frozen tortillas from the package they become dry and brittle and spring leaks when rolled to make burritos. (We defrost them in a pre-heated toaster oven with the power off.) We've tried different brands and size of tortillas, and even once made our own from scratch and froze them, with the same unsatisfactory results. Any suggestions? Thanks.

How do you make tortillas like the ones at Alberto's?

First of all, tortillas are easy if you have the right ingredients:
You will need a food processor, if not, you can do by hand:

Recipe: 2 cups bread flour
1 cup semolina flour
1 TB fat or lard

Mix all together in the processor till it forms a ball going around the base. Start machine and drizzle small amounts of water in it, let it mix, add a little more, etc:: do not over due the water. The ball will be moist but hand able. Take onto a floured board and knead turning around on each knead till ball becomes very pliable and not sticky (add small amounts of flour at a time (tsp) Cover with Saran wrap and refrigerate at least a hour.

Remove from fridge, cut the dough into 1 ounce balls, cover with a damp damp towel to keep moisture in. Take 1 ball on a slightly floured surface and roll in all positions so you keep the round shape. If there is any sticking, just dust with flour, turning over also. Pat excess flour off a line them on a plate in between parchment paper, OT aluminum foil.

Cooking: Take a non-stick pan big enough to hold the size of the tortilla and on high heat (no oil, no fat) dry hot pan.
***place a tortilla in pan on one side and as soon as it turns light brown or have some black patches, flip and do the same on the other side. You are only looking at about 3-4 seconds a size. Do not over cook or they we not roll good, they will split. Bon appetite

Why do my flour tortillas keep coming out hard.?

I have tried many different recipeI find online. I do everything according to them except the turning them in my hand because I can't. Once I put them in the comal ( i got one) no matte what time I leave them there for, they always come out hard.

I'm trying to get that soft honduran taste.

My homemmade flour tortillas always turn out too thick and chewy. Can anyone help fix this problem?

My husband lived in northern Mexico for a few years and always craves homemade flour tortillas. I have tried to make them a few times but they always turn out wrong. The dough never seems soft and supple enough. When I roll them out I can't get them thin enough and when I cook them they don't bubble as they should. The ones he ate always were cooked with lard and I even bought some of that and it still didn't work. My main problems are 1. how to get the dough soft enough to roll out really thin 2. How long and at what temperature do I cook them so that they come out right? Maybe I need a better recipe or just better instructions?

u can make a quesadilla like that. i use a quesidalla maker to make mine...

You may be using Tortillas that are too dry or too cold.

Warm them up if they are too cold and if the are dry try a quick steam just a little then fill and fold.

Don't over fill it seams that when people make burritos they put in all over their favorites and end up with too much in them.

That's why you can't fold them properly and keep them together,
