1 pound boneless, skinless chicken tenders
Salt and pepper
1 (8-ounce) container plain yogurt
2 cups finely ground, toasted bread crumbs
Olive oil or pan coating

Preheat oven to 400 degrees F. Season chicken with salt and pepper. Pour yogurt into a shallow dish or plate. Pour bread crumbs into a separate shallow dish or plate. Dredge chicken through yogurt, shake off excess, place in crumbs, and coat all over. Gently shake off excess crumbs. Spray a large non-stick pan with olive oil or pan coating. Place tenders on the pan and bake for 6 minutes. Turn tenders over and bake another 6 minutes, or until tenders are crisp and cooked through.

TURKEY COCKTAIL MEATBALLS RECIPE

1 lb Lean ground white meat-skinless turkey
1/2 c Crushed fat-free saltine-crackers
1/4 Onion, chopped
1 Egg, beaten
1 tb Chicken broth
1 tb Worcestershire sauce
1/4 ts Lite salt (optional)
1/2 ts Poultry seasoning

--------------------------------SPICY SAUCE--------------------------------
1/2 c Chili sauce
2 tb Vinegar
2 tb Brown sugar

Mix all of the meatball ingredients together and roll into bite sized balls.
Place meatballs on top of a broiler pan so any fat will fall through. Bake
at 375 degrees F. for about 15-20 minutes. Mix spicy sauce ingredients as a
dip for meatballs. Yields 50 Meatballs.

Minced chicken recipes?

Minced chicken requires more herbs and spices than beef and better binding agents. Here is a tasty meatball recipe that I have made recently which was delicious. The meatballs can be frozen once cooked. The herbs in the recipe are dried herbs which is what I used except for the parsley, I used 3 tablespoons of chopped fresh parsley. If you don't have the oats, I am sure bread crumbs, panko bread crumbs or even 3 slices of bread soaked in Ice Water and squeezed out or processed in the food processor to make crumbs will work To add some crunch, add 1 about 1/2 cup drained water chestnuts, finely chopped. The chicken meatballs are good in any recipe you would use beef meatballs in, like spaghetti and meatballs or put some julienned raw baby spinach in a bowl. Heat some low sodium chicken broth, add some short pasta and simmer until the pasta is cooked, add the meat balls to the hot soup and heat through. Ladle the soup, meatballs and pasta over the spinach. You can also cook tortellini separately in place of the short pasta.

Baked Ground Chicken Meatballs Recipe

•2 pounds or about 1 kg ground chicken and/or pork
•1 med onion minced
•2-3 cloves garlic, minced
•1/2 cup (125 ml) uncooked instant oatmeal (I used Quaker old fashioned oats, not instant)
•2 eggs
•1/2 cup (125 ml) Parmesan cheese
•1 tsp (5 ml) basil
•1 tsp (5 ml) oregano
•1 tsp (5 ml) parsley
•1/2 tsp (2 ml) ground sage
•1 tsp (5 ml) salt
•1/2 tsp (2 ml) pepper

Mince your onion and garlic or throw them in a food processor if you don't want to chop them. Add all the ingredients in a large bowl and mix together. I usually mix by hand.

Use a #30 (3 Tbsp) scoop and scrape the side on the bowl so they are all the same size.

Cover your sheet or pan with tin foil for easy clean up. There is no need to put baked ground chicken meatballs on a rack because they are really lean and won't have much grease. They bake fine even if they are touching, just keep them in a single layer.

Bake at 425F (240 C) 20-25 minutes. Don't overcook or they will be dry. Don't undercook for food safety reasons. Break one open and make sure the center is cooked through before serving or cooling to freeze.

How long would egg mayonnaise keep in the fridge?

i'd say no more than 3 days. the mayo will start to split & go watery. you could always boil up a few eggs, leave them in the fridge & make it up as you need it. mayonnaise once opened doesn't last that long in itself. it normally has to be used before 4 weeks, a few within 2 months.
