Basically they are just called "stairs", though different plane makers call them different things. Some call them "passenger stairs", some call them "airplane stairs", and so on. Unless you are referring to the ones not connected to the aircraft itself. Those are called rolling stairs.

Sort of, After initial flight school. They highest rated pilot candiate gets to choose what aircraft he wants to transition into, from the list given. IE: The Air Force might tell one class, we need 2 F-15 pilots, 1 F-16 pilot, 7 B-1B pilots and 5 C-141 pilots. The highest ranked pilot candiate, gets first choice of that list, if an aircraft is not on the list, they cannot choose it. It then goes from highest candidate to lowest candiate. So the last guy in the class, doesn't get a choice, they have to take whats left on the list. Every class has a different list, it is based on wht the AF needs at the moment. So you can have a class have mostly fighters and the next class will have no fighter opportunities at all. But you know you have to have a BS degree, be commissioned as an officer and apply for flight school. You cannot enlist and be a pilot.
