Why do we get green when we mix blue and yellow?

I get blue when I read questions like this one. For goodness sake, can't you mix colors yourself? There are a million greens and a million yellows so there is really no definitive answer to this question.

If you mix green and orange light, you should get something that appears to be yellow light to your eyes. Colors of light add together. But if you're talking about pigment, those colors subtract. Pigments make their color by absorbing everything but that color. So the mix would absorb all non-green and all non-orange, which wouldn't leave much to reflect.
