The "hissing" you hear is from the camera's use of the automatic audio gain. When there is no ambient noise, it is listening. Step 1: Use the manual audio gain control.

I hate to break this to you but the built in microphone and associated electronics are not optimized for this. You really need external microphones and appropriate signal chain. By signal chain I mean mic preamp. You have to get the positioning right on the mic(s) and adjust the preamp for optimal levels without distorting.
