Why does Sonic Collect Rings?
Rings have a protective power. When Sonic has even one ring, he is immune to most damage (with the exception of being crushed, etc.) Thus, he needs them to protect himself. Also, he needs rings to maintain Super Sonic status. He exerts so much energy as Super Sonic he needs the outside help of rings to help stay in that state.
