How do I write a diary entry from a characters point of view?

I often have conversations with my characters. I find that their voices are different from mine. So, pretend to be that person and write what that person says, she thinks, what she would not tell anyone else. Remember that the person only knows what she knows, believes, or thinks, and there are many ways that she might be mistaken, prejudiced, or biased in her thinking.  She might misinterpret what her friends said or what her boyfriend did, or in some other way just be wrong, or she may have seen something that she shouldn't have.  Diaries, at least the ones I wrote as a young woman, tend to be self-indulgent and maudlin, so to make yours work, you'll have to edit it much the same way that you edit fictional conversation to be more meaningful than real conversation. You character, however, might be a journalist, a person with no other outlet, like Anne Frank, or some kind of mad scientist. The Pilgrims had suffered financial loss because pirates would capture their merchant vessels and steal what they had. These setbacks ultimately led to the financial ruin and lack of return for investors that had initially put money into the colony.

E.g., Obviously, pirates and Pilgrims differed in their moral values. Pilgrims believed they were servants of God, and with that, believed that stealing was wrong. Pirates, on the other hand, made their living off of stealing.
